Yes, fast....but where is the consistency!?! Ever wonder why there is a huge chunk of some vegetable in your soup or on your plate? It's because one of these jerkoffs wanted to go home early so he just cut everything as fast as they could. Coming from a Chef, you should work smart, not hard in a kitchen. Give me any of these guys, same ingredients, same recipe, and my food would be done before theirs, taste and look better. Besides, I could do all of that too if I wanted.

As a cook, that spends 8 hours every day in kitchen, I don't really see anything special. It's all about experience and practice. You only need to learn, how to hold whatever you're cutting properly, thats all there is to it. Then you just chop with your knife like there's no tommorow

Actually, if you have a really sharp knife, it's not that hard.

I have a Shun chef knife - people are usually impressed when they see me chopping stuff, but I'm not even good at it.

Also, even though it can cut thru flesh like it isn't even there, it's not dangerous if you have correct technique - haven't cut myself in 3 years.
