Okay, reading through the comments, I'm seeing people trying to correct OP, but getting it wrong themselves, so, let's review some terminology, shall we?

Evaporation is a shift from liquid to gas (often without aid). We can all agree that this is not what is occurring here. Boiling is essentially the same thing, except instigated by an external heat source. That is how the water starts out in the video.

Condensation is a shift from gas to liquid. Some may argue that this occurred, but, the shift was so instantaneous from gas to liquid to solid, that, honestly, that would be the incorrect term (and no, that is not a cloud, it is snow). As a matter of fact, this shift, from gas to solid, is called deposition, and is likely occurring in minute amounts.

Freezing is a shift from liquid to solid. That is, in fact, the majority of what is occurring in this video. The water is tossed out, into an environment so cold that it almost instantly goes from 100 degrees C (212 degrees F) to 0 degrees C (32 degrees F), and continues to plummet, forming a plume of dispersed snow.

People have also been tossing around sublimation. That is a shift from solid to gas, and is very clearly not what is occurring. Again, they're probably thinking the opposite, which is deposition.

Well, I hope that this can help people out, and may stem some of the arguments over semantics, to we can just go "wow, this is pretty... cool."

Fun fact, the Fahrenheit and Celsius scales meet at -42 degrees, so -41C is equal to -41.8F
