What way are you trying to kill him? straight on fighting or the platform and plunge way?

You should if you don't really want to go after the Capra Demon, you get a good amount of souls and the boss fight is pretty slow
You can't really die unless you fuck up bad and get hit by one of its solar beams

Darkroot Gardens, there's a long passage way beside the church after fighting the Tower Knight and the wizard, if you go down that path and go down the stairs there will be a blacksmith and some more stairs, be careful there because there will be a Titante Demon there in the room just down the stairs but you can run past him and then into the gardens, the butterfly is near the end of the area near a sort of bridge

i went there, killed a few things but i was then ambushed by 2 stone guys and 2 trees

I just run pass the stone guys, you can go through that area only disturbing one stone guy who was at the base of a small ruined tower guarding the fog door which is just up the stairs from the stone guard
