I will never understand people who say Dark Souls isn't difficult because it's all about memorising patterns. What about sports then? Are football, rugby, cricket and american football easy as well? How about rock climbing up huge cliffs? That's not difficult if you know how. If you know how to do it, then of course it's not difficult. But the part that is difficult is learning to do it. By the logic that they apply, nothing in the world is difficult. Exams are easy if you know it. And it's true, they are. But the difficult part is knowing it. So shut the fuck up and realise that Dark Souls is actually a hard game with a big learning curve.

I don't own the PC version but from what I've heard the KB&M controls are so shit that if you don't have a controller you can connect it's not worth getting on PC.
It's the same principle of something becoming easier when you learn it.
The problem is that when you learn Dark Souls, you know what enemies will jump where, what attacks they'll use, when they'll use them, how they'll respond when you block or attack, or if they use any kind of magic.
You never know what's going through the mind of someone on a rugby field, unless they have the ball.

But it's not that predictable. You might know that the Serpent guy is going to swing his heavy attack at you, but you don't know when. You can easily swing just before/after he does and get hit. Sure you know how they'll respond, but you don't know exactly when or where they'll do it.
Thats a decent point. But think of it like this. A boss battle in Dark Souls is equivalent to a big football match (I know they're not really but just imagine). We'll use Ornstein and Smough, because they are a prime example of DS's difficulty. Now, when you are playing the football game, you don't know what they're going to do, but they're are only a few things that they can do to avoid disqualification e.g. Pass, dribble, tackle etc. In DS, Ornstein and Smough have a set move set that you can learn, but they don't do the same thing every time. It's also based on where you are and where they are. Ornstein could charge at you, but he could also throw his lightning spear. This is where your example of 'wait till he's recovering' becomes invalid, they don't recover. Neither do any of the other bosses and several of the mobs.
Honestly, Ornstein and Smough can be easy. Smough has no long range attacks or general speed, so just take your time with Ornstein while being careful to not be next to Smough. Then you only need to mainly worry about Ornstein.
