They would eat us for the same reason we eat them...because they are the apex consumer on top of the food chain. You act like humans are above consumption. When we die, bacteria, microorganisms, and even carrion happily munch on our carcasses because we are an abundant supply of energy. And animals don't have "fewer moral thoughts" they are incapable of morality. They don't even have/utilize the portion of the brain involved with morality. We do use our intelligence to do "good" in the world. We (for the most part) realized we were over hunting species to extinction or near extinction. We then domesticated animals for the sole purpose of consumption. SOLE PURPOSE. Meaning we can't just return your happy little cows and pigs back to the world, because they would wreak havoc on local ecosystems and the environment. Either way, arguing with you about this (Sorry I can't eat that tuna because it might infringe on his happiness)...is exhausting and futile. Enjoy the watercress chum...I'm having steak for dinner.

Why not use our intelligence to do good to the world, rather than act like pigs, because pigs act like pigs? How about holding some responsibility for our planet since we came out to have more control over it than any other animal?
And btw. if pigs, cows or chickens would be more intelligent than humans, why would they eat us? They most likely wouldn't because they'd know that causing pain in the world is just a stupid thing to do, since we're all conected to each other in a way and only hurting ourselves.

And being vegan is totally choice based in morality. Anyone with half a brain knows we are omnivores and the only sentient omnivores in existence...so we are the only meat eaters capable of questioning our food sources. It's easy enough for you to say it's "egoism" but what if you live in a part of the world where the only readily available source of protein (inb4 muh legumes) is animal protein? Fucking starve to death you egotistical bastards!
