Actually shots that are set to fire such as B-52 are often served with a straw so you can suck the shot from the bottom layer. This way minimizes the chance to ignite you're face and the lack of oxygen in your mouth actually puts out the fire before it does any damage.

And I know this shit since I actually work as a part time bartender and have served these shots a couple of times.

I told I'm no expert. I would let it burn away. I think it's meant to burn away, because you add it only a splash for igniting (which isn't much).

But if you want to put it out (ex. pure 151-proof vodka shot) just put a bigger cup on it. Or put a plate on it. Bigger cup is a lot safer.
