For the chicken:
2 lb chicken breast
1 lime
1/2 bunch of cilantro (use extra as garnish on your fajitas) Some people describe cilantro as having a soap-flavor, if you're one of these unfortunate bastards, you can leave it out
1 tablespoon of ground black pepper
2 teaspoons of salt
2 tablespoons of cumin
1 teaspoon garlic powder
2 tablespoons onion powder (optional)
about 2 cups of tequila
(spice measurements are not concrete, if you want more salt or cumin go for it)

For rest of fajitas
tortillas (about 8)
1 large onion
1 bell pepper, any color
1 poblano (optional)
guac, salsa, cheese, sour cream, or anything you like on your fajitas

0.5. Prepare the chicken breasts by removing any large pieces of fat that may be on it, if the breast is thicker than 1 inch at any point, cut the breast in half so that you have to thinner pieces
1. dice cilantro and add it to a medium/large bowl, add salt, pepper, garlic, cumin, onion powder, and the the juice of the lime to the bowl, mix lightly, add the chicken breasts to the bowl, add tequila until the chicken is covered, mix until the chicken has mingled with the spices. Let the mixture marinate for at least 30 minutes in the fridge.
2. set your grill to a high heat to secure a sear on your chicken, while waiting, slice the onion, bell pepper, and poblano into long, thin strips.
3. When the grill is nice and hot, add the chicken, after about one minute, flip the chicken to get a sear on the other side, lower the heat down to medium, the chicken will take about 6 minutes on each side from this point to cook through add some of the marinade liquid on top of the chicken as its grilling to impart some extra flavor , so move onto step 4.
4. heat up a frying pan with a small amount of olive oil, add the onion, bell pepper, and the poblano to it and add salt and pepper to taste, cook on medium low heat, mix periodically to prevent burning
5. The chicken will be done when liquid begins pooling at the top if you're unsure, cut the chicken open at its thickest part and make sure the meat is opaque white, if its pink, put it back on for a few minutes, an overcooked chicken is much worse than an ugly moist chicken
5.5. let the chicken rest for at least 10 minutes after it gets off the grill, move onto 6
6. pepper and onions will be done when they're tender
7. Heat tortillas in the microwave for 30 seconds, flip the stack in any way that ensures the cold tortillas get heated and heat for additional 30 seconds
8. slice chicken into long strips or chunks based on your preference

enjoy, serves about 3-4 people depending on how hungry you are, make your fajitas how you want
