It's better to use raw chicken I'm pretty sure. Leftovers have lot of the flavors already cooked into them. Boil chicken in salty water and the water cooked the meat on the bone and the flavor goes right into the soup. Whenever I made homemade chicken noodle soup, that's what I do.

For sure. It's not like using raw meat is the only way to go either. There are a thousand ways of skinning a cat, as the saying goes, and most chefs are far less uppity about how to prepare things (whether to prepare dishes the classic way or the gourmet way or a modern risky way) as long as the end result is tasty.

Some guy did an experiment in which he thought hard about his kids being under a car (and in danger), and he ended up flipping the car on his own.
Humans are quite strong, our brains are just like "Nah man, you'll fuck up your body by doing that" 99% of the time, and only "lets go" when there's an emergency.

in all honesty there is no definite proof because we have no way to remove that limit completely that's humane, but that being said majority (including the professionals not just the unknowing populus) believe it's true. there are many cases of where people have bitten off their own fingers but they admit its hard but they did it with the limit on so it'd make sense that it'd be alot easier without the limit, for example as easy as eating a carrot (raw).

so it's not definite but if its not that easy it'd only be a little harder if at all.

raw carrots are hard but theyre no harder than bones, however the thin bones in your hand are easy to snap due to being long and thin, so like a carrot when you bite it you feel the tension and it bends then you get that satisfying snap, a finger bone would react the same way. however if you bit the knuckle it would be way harder to do since the bones thiker there. The only thing that would make the long finger bone harder to bite off than biting a carrot is like you said the muscle and skin, but there is far less of that around fingers than most body parts and it would compare to an extremely thin slice of meat which shouldn't add much difficulty.
