There is no need to untrain the skill. As you can see its still usefull.

There is a guy in Australia called Boyd Hoper who has a dog called Locke, probbably his best dog at finding people. i'm not kidding he Australian famous in certain feilds as being the dog nobody can hide from. That dog is always on the lookout to find people and start tracking scents no matter where he goes. Even then when he retires there is no need to untrain it as you probbably can't

Considering the dogs are usually bred into the job you'd go with it, but slowly and surely guide them away or teach them something else to focus on.

Suddenly trying to stop what they have been doing their whole life, ignoring their work, going cold-turkey, will likely cause problems.

Yeah, I would agree, If I were in that situation my first reaction would be to go over and check what the dog found, then reward him for a good job, as to not mess with him or confuse him, after all as you said, they are bred for it.

Praise the dog for finding the object, if you're unable or unwilling to defuse the situation, call someone who will.

If you tell the police your bomb-sniffing dog has a hit, I'm sure someone will respond.
