The Author pronounces it jif and jif is easier to pronounce, so therefore jif is correct and anyone who says otherwise is a pedantic tightwad.

alright let's see...never played the first zelda so I'll list all the zeldas and see if this happened in them.
adventures of Link, Zelda is asleep in a palace, go get crystals, ganon doesn't appear.
link to the past, Zelda and 7 other people used to break the bonds between dark and light world, triforce isn't a big deal.
ocarina of time, Zelda is captured but she still had it throughout the reunion of the three people.
majoras mask, no one cared for triforce
oracle of ages and seasons, no one cared for triforce, just the goddess people.
links awakening, triforce isn't cared about
wind waker, everyone loses their bits to create the triforce, it's sealed before ganon can have it
twilight princess, same deal as ocarina of time (though perhaps ganon stealing zelda's body counts as having the triforce of wisdom, he loses it when he's expelled)
phantom hourglass, no one cared about triforce
spirit tracks, no one cared about triforce
skyward sword, link had all three pieces, no one else.

am I missing any? because if not, I can't recall a single time when ganon had the triforce of wisdom...oh yes, and we aren't counting CDI games or animated cartoons.

ALBW - Ganon (though merged with Yuga) assimilates the triforce of wisdom from Zelda when she is trapped in a painting.
Though admittedly not many many times as I had remembered, but during the downfall timeline he did have the complete set
