| The specific heat capacity of air is nothing compared to the oil, so the rate of change of entropy would be far lower than that of the metal/silicon to oil. It would only lower the theoretical maximum temperature by a few degrees. An overheating motherboard could hit 100 degrees easily, so the oil would quite probably hit 92-95 degrees (celsius) if you give it enough time. | Coolant is valid because it is cycled through a second medium (usually air) that sits at a significantly lower temperature. If what you said was true, every oven in the world would be invalid because it would just cool down. The constant input of energy into the oven/deep fryer/motherboard means that no matter what, eventually the oil would heat to very close to the temp of the motherboard. It just takes time, and the radiation/conduction of heat means it will never get to exactly the same temp, but it will get pretty damn close.
