You're wrong.

The colour of your blood is down to the haemoglobin in your RBCs. Therefore, considering that you can't separate haemoglobin from your RBCs, your blood is always red no matter the Oxygen content in it. However, the level of Oxygen does vary the shade of red that your blood is - for example when your blood exits the lungs it's a brighter red than when it enters back into them as oxygenated haemoglobin is a brighter shade of red than regular haemoglobin.

Secondly, you say there's "nothing within water that gives it a flavour besides the minerals consumed." - then what flavour are those minerals?
