as a bird specialist i can confirm that the hybrid wouldn't be interested in eating people, emus mostly eat pests and the stork only eats water based creatures and rodents etc, the head wouldn't be much bigger if at all but the body would be at least double till engineered to be bigger then nature intended.
both are pretty passive if kept fed as well...
look up hybrid macaws for hints at how some crossbreeding interacts, it's actually kinda neat.
