War is a terrible thing, you see things that would haunt a man for the rest of his life. But those men kept fighting and won that war despite it all. French, American, British, Australian, Canadian, Russian, China, and many more who fought and died in the second world war.
I hope my grandfather comes around sometime too, he was a Tank Commander in the 2nd Armored Division "Hell on Wheels", he never told me his war stories but told me he got blown out of a tank twice.

Yes, the weight of the barbell (usually 45lbs for an Olympic bar) is added to the weight of the plates. The total is what you're allowed to brag about.

5x5 is a time proven method, I would stick to it if I were you. (By the way, just count the bar with the weight, that's how everyone and their mama does it) You skyrocketed so fast because you're just getting started, you gain strength quickly in the first couple weeks because your muscles become stagnant, and lazy when you don't exercise them, when you start lifting it's kinda like you're waking them up, so as they become more active, you start gaining strength quicker. This slow down in gains it more likely than not just the end of the 'waking up' process, you got used to getting really fast gains in those 2 weeks, and now you think you're slowing down, when you're probably just going to a normal pace, the key to lifting is patience, you have to stick with it a while to make the gains you're trying to get. So persist! You'll be seeing results in no time.

I'm gonna be honest with you, I've never gone by a specific strength building diet other than consuming 1 gram of protein for every pound of desired body weight (I'm a husky 220, I wanna weigh 200, so I eat 200 grams of protein on days I work out), other than that I eat -to a degree- pretty much whatever I want. As I am now, I can bench 215, Squat 405, and Deadlift 405, so it's worked for me, you might wanna try it, though not everything that works for one person will work for another, you just have to find out what works best for YOU, you have to listen to your body.

Proportions bro. Your main powerlifts (bench, dead, squat) usually start in the same area, but squat and deadlift typically surge ahead when you begin to get to an intermediate level because your lower back muscles (worked with deadlift), and your quads (worked with squat) are much bigger muscle groups than your chest and triceps, basically, they're larger, and therefore grow faster, because of how *hypertrophy works. If you're working your different muscle groups correctly you'll see faster improvements in your squat and deadlift, when compared to your bench.
*Hypertrophy: The process of tearing down muscles so they can rebuild larger, and stronger.
