14 of just over 30 bosses fit the "big dude with big weapon" category.
The world makes zero sense geographically. No mans wharf is below sea level but not flooded. WTF even is iron keep?
Copypasted bosses like ornstein and gargoyles.
Story is filled with plotholes and poorly written. Ornstein makes zero sense. If manus is gwyn reincarnated he had no reason to fear nashandra. Why doesn't nashandra just go get the king ring herself? Why does the undead take the throne at the end? Why is the cure mentioned in the opening cutscene never brought up again?
NPC stories just end halfway through. Cloanne and lenigrast mention that they recognise eachother basically. Then nothing happens. Same dialogue forever. Years could pass and they don't walk 10 steps and say hello. Just "hey that dude over there looks like my dad".
Cale is supposed to be exploring to map the world, but just suddenly stops for no reason whatsoever.
Encounters are designed to be difficult, not interesting. Rat authority took what made capra demon a shitty boss and turned it up to 11, making an even shittier boss. Iron king has a lava pit just out of the camera's vision to cause cheap deaths through being facing the wrong way when you're hit by a physics ignoring knockback. Throne watcher & Defender punish you for killing them one at a time, even though the series has been teaching you to do exactly that in multi-boss encounters ever since demons souls. NG+ adds artificial difficulty, like how in the flexile sentry fight the adds have ring of thorns, making the fight luck based as you randomly take damage.
World design is awful. You kill 4 gods instead of climbing a chest high pile of rubble to get to the castle. Because fast travel is there from the start you never have a reason to go to the huntsmans copse entry point to licia, so it's required content that's just hidden for no reason.
I can keep going if you want to. Seriously, the game is nowhere near as good as the others. It's about average.

Except there's a difference in writing with spaces for fans to fill in and flat out half-writing a terrible story.
Things like solaire possibly being the first born in the first game were examples of this done right.
The second game done this wrong at almost every turn. Lost sinner gets next to no backstory, neither does the rotten, neither does freja. It's a half written mess.

OK, I'm no lore expert here at all, but I'll try to debate you on this. Sorry if I do poorly.
It makes sense most of the bosses are big knights and shit. You're in a kingdom that's falling apart, not an already collapsed, monster/hollow infested land like Lordran. The knights are still trying to protect the kingdom, and most of the out in the open big monsters were probably dealt with by the knights while the kingdom still stood.
In multiple places, people talk about how shit's distorted. Is there any proof No man's Wharf is actually below sea level, or are you considering it below sea level because there's water above it? Because of the boat, I'm assuming it's in-line with the rest of the water. Either that, or no man's wharf/the lost Bastille could just be on a lower area of water, since you did go down into a cave, after all.
As for Old Dragonslayer? It's all up to speculation. A popular speculation is that the ornstein you fought with smough was an illusion, and Ornstein simply hid. He might have hid in the abyss, like where the darklurker is and shit. He waited out multiple kingdoms, come and fall, and then came back, waiting by this Cathedral.
As for Nashandra, she's letting your character do all the work. She lets you kill all of Vendrick's forces, possibly kill Vendrick, and possibly bring the king's ring to her yourself, so she can kill you and take over. Not sure about the undead taking the throne, guess he's just a vain guy. Your character seeks vendrick entirely to search for the cure. And with each DLC, each crown lets you talk to Vendrick more, possibly about the cure for the curse. But as you can see when you find vendrick, he never did find a cure for the curse.
I'm not sure about Cloanne and Lenigrast. I wish they had done more with them honestly, like if you attack Cloanne, Lenigrast will attack you to protect her. Or maybe you can give Lenigrast an effigy to make him human, and she recognizes him.

You're in a kingdom falling apart because they wrote it that way. If your writing prevents your game from having good enemies then that's just idiotic. It's a game first. Besides, there's more to it than just kingdom knights. Lost sinner, old dragonslayer, flexile sentry, smelter demon all could have been interchanged with non-humanoid bosses with exactly the same lore in place.
Yes, there is proof. There is a map viewer of the game, and no mans wharf is way below sea level.
Old dragonslayer isn't up to speculation. Ornstein in the first game could drop the leo ring. This was a unique (see: One of a kind) ring crafted by gwyn. Because of this, he can't be an illusion in the first game, but because he drops it in the second game too there's just massive inconsistency going on.
Why would nashandra let you do all the work? What kind of character writing is that? The villain is lazy is not good plot explanation. Besides, she had no reason to believe you (or anyone for that matter) could do what you did. Unless of course she knew about the way cycles work due to vendrick, but in that case she would know she couldn't possibly beat you.

Well, the Lost sinner's lore is about being a forgotten prisoner. They really should have provided us with some information on what that bug was that make the prisoner go insane, or at least let us know why she can just freely walk around. But other than that, true, the lost sinner could be replaced by like a jailer knight or something stupid.
Does the Flexile sentry even have any lore to it's importance? I remember arrow sniping the guy guarding the lightning axe, and I thought it must have been shiedless lothian or something, until I read up.
Smelter demon, I also agree. No idea Why there's a giant flaming asshole faced demon in that room, and why those knights are guarding it. Could have been maybe Allone knight general or something. I dunno.
Old dragonslayer? Maybe they'll give us some lore in the future to explain him some more. Maybe it'll be like the havel gank crew thing, where the havel guy could have been one of those guys that served under havel. Perhaps something similar with the Old Dragonslayer.
Just looked into the Nashandra thing, turns out it's not confirmed at all that's the idea. But judging by her just waiting by the throne, one would assume that she's simply waiting for Vendrick to make a move, or for someone to do something themselves.
All in all, I guess we can just hope that the other DLC's explain this stuff. For now, I guess your complaints are logical. It all comes down to preference I suppose.

As for Cale, I'm not sure, but it appears he's studying the map in the basement, trying to figure out what the fires are. He figures out that it's a map of the continent, so he has no reason to travel anymore to map out the continent.
Rat Authority is a bitch, I agree. Have to quickly kill everything, otherwise it's a gangbang.
iron king, without the lava pit in the back, would actually be a super good boss honestly. I sit around that boss with my allone knight cosplay character and summon to fight him. Only time I die is when he knocks me into the pit.
Can't debate on throne knights.
NG+ is actually expanding the game, giving you a new surprise instead of just being speed run this time around, where the enemies hit slightly harder, but it's alright because you got all the good items in NG, so you can just run through NG+. It adds new enemies, nice surprises, and different drops and such, making you want to run through the entire game again just to see what all changed.
I don't really have a problem with killing four great powers to open a gate. You can see from areas such as Heide's tower, that you start out nowhere near the castle.
The Licia thing is about conserving your limited amount of souls I believe. Don't want to be unable to get in there because you killed all the enemies and can't get the souls to get in there or something.
I liked the game. Not as much as dark souls 1, but it's not a bad game, or just average, to me.

PVE wise it did despite some gimmicks like supertracking and ambush related "difficulty"
PVP wise (the REAL long term reason to stay in the game) it got 95/100 in terms of awesomeness then SOUL MEMORY knocks that down to 30/100
Soul Memory- something designed to help noobies affects everyone AFTER NG+ when they shouldn't be noobies anymore. Fucking stupid.
