I've played Bloodborne and the Souls series to completion multiple times. From Soft games hit a lot of the notes I like in those games. They let the story unfold through the world rather than hand feeding it to me which is great and draws me into the world better than a lot of games out there.
Bloodborne definitely falls under horror as a genre, I love the clear Lovecraft inspired designs in the game and the mind games it plays with your role as a Hunter and if you are actually seeing what is there or if your character has gone insane. Like how with the more insight you get certain enemies change appearance and certain audio can be heard only with high insight. The game is a masterpiece in design and concept I think personally. They accomplished exactly what they set out for which is rarer than I'd like to admit for games.

A lot of horror genre stuff lately has all been reactionary like with jump scares and that's why I hate them. They are relying on something I would do regardless because it's only natural to jump back from something in your face. It's not scary its instinctive.
Ambiance and story are things that should make horror. It doesn't even necessarily have to be traditionally scary. It's all about exploring concepts and ideas that unnerve or unsettle us in some way, I want something that forces me to consider things I wouldn't normally or find a way around my guard-head games basically. It's hard to hit those tones but like the stuff you listed above when those strings are struck it makes something amazing.

Sounds like you'd love Bloodborne, if you haven't played it already- it has an incredibly imaginative world and lore, all eldritch horrors and the like, and there's just this feeling of despair that it creates which really stuck with me. Plus, the visual designers have clearly done their research into what people find scary: with certain bosses, they haven't used obvious body horror, but rather trypophobia in their designs, resulting in you fighting something that is instinctively disturbing even if you don't know why.
Some may not even see it as a horror game, but it's truly unsettling.
