I'd say for everyday pocket knife use for someone who doesn't want to take care of their knife at all aside from more frequent sharpening, a good stainless would be okay. I do, however, stand my ground that for outdoor use in camping, survival, hunting, etc., or in cooking, carbon steel is far superior. and stainless steel fixed blades, with the exception of dive knives, are generally poor quality

Need I refer you to literally every knife Fallkniven makes? How about high end Japanese cooking knives? Or Moras (when it comes to steel quality, not the handle)? Bark River knives made in S30V? Same for ESEE/Rat, Becker, Enzo, Blind Horse, and Fiddleback Forge knives. Also, Kershaw, Benchmade, and Spyderco's fixed blade models. I'll give you more if you can somehow refute that. And by the way, you don't just wipe carbon blades. For optimum preservation, you oil them. Air above freezing temperatures will erode it otherwise, unless it's in a leather sheath, in which case you should oil the sheath as well.

The only gripe I have with this comment is the high end cooking knives. Do you know how often they sharpen them? At least once a week in a popular restaurant. The edge dull quick when you cut 1000+ times a day.

I would still pick a carbon knife for work, because of the abuse I put on them. I by no means dislike stainless if it's good, but when people have shitty stainless and show it off like it's 5160 i get pissed. I have an EsKabar I use for work because it can handle the abuse and I don't have to sharpen it too often, and I have and a CRKT minimalist I use when I'm outdoors, it's a pretty good little knife and holds an alright edge.

I like how easy they are to sharpen too, but I pretty disappointed when I received my EsKabar. It came nearly dull. So I had to sit there and grind an edge and sharpen the shit out of it. Now I can fucking shave with it. Whereas my minimalist came as sharp as a straightedge razor. But I also have a friend who bought a BK11 and his was razor sharp. So I guess mine missed inspection.

would've helped if you had mentioned saltwater earlier.
I do agree that in around saltwater stainless would be your best bet, however for pretty much any other application, carbon is the way to go.

Cleaned it at the end of every day. It literally got eaten by the saltwater. I had to sharpen it once a week because the edge was getting eaten.

that's cause you probably didn't take care of it. if you kept it clean and dry, it would last just about forever. there's a good reason most cheap knives are stainless and expensive tend to be carbon

Any stainless blade isn't going to have the quality of other steels. It's too hard and brittle, so it snaps easily.

Stainless blades have a high chrome content. Making them hard, but brittle. Meaning they'll snap before they'll bend. Granted there are good stainless blades, but the same quality stainless compared to a similar quality non-stainless will lose almost everytime. Take 1095 for instance, put that up against AUS-8 in an stress test. The 1095 would win. Both are good quality types of steel, but since there is more chrome in the AUS it's more prone to breaking than 1095, but 1095 will rust if not up kept. So each steel has a trade off. Stronger steel, but it can rust. Weaker steel, but it won't rust.

For one, sintered stainless steel with high carbon content. That is all. For two, toughness doesn't equate strength. Either way, you can laminate or edge quench steel. Softer steel is generally tougher, no matter what kind. Look at Fallkniven blades, for instance, with 420J2 on the outside and VG-10 on the inside.

Solid VG-10 at 59 HRC is very brittle. The lamination allows the tougher steel to absorb shock and prevent any kind of chipping that would occur from the edge flexing during strenuous activity.

I would still pick a carbon knife for work, because of the abuse I put on them. I by no means dislike stainless if it's good, but when people have shitty stainless and show it off like it's 5160 i get pissed. I have an EsKabar I use for work because it can handle the abuse and I don't have to sharpen it too often, and I have and a CRKT minimalist I use when I'm outdoors, it's a pretty good little knife and holds an alright edge.

Yeah, I'm basically the same way except that I tend to favor stainless. Good steel is good steel, though. I love the ease of sharpening carbon steel.

I like how easy they are to sharpen too, but I pretty disappointed when I received my EsKabar. It came nearly dull. So I had to sit there and grind an edge and sharpen the shit out of it. Now I can fucking shave with it. Whereas my minimalist came as sharp as a straightedge razor. But I also have a friend who bought a BK11 and his was razor sharp. So I guess mine missed inspection.

That's impressive. I don't have a proper strop right now, so I can't quite get a shaving sharp edge on my stainless blades. It'll still take off hair, though. Just not consistently and cleanly. On my carbon Mora, I got it nearly shaving sharp on some 800 grit sandpaper.

Stainless blades have a high chrome content. Making them hard, but brittle. Meaning they'll snap before they'll bend. Granted there are good stainless blades, but the same quality stainless compared to a similar quality non-stainless will lose almost everytime. Take 1095 for instance, put that up against AUS-8 in an stress test. The 1095 would win. Both are good quality types of steel, but since there is more chrome in the AUS it's more prone to breaking than 1095, but 1095 will rust if not up kept. So each steel has a trade off. Stronger steel, but it can rust. Weaker steel, but it won't rust.

For one, sintered stainless steel with high carbon content. That is all. For two, toughness doesn't equate strength. Either way, you can laminate or edge quench steel. Softer steel is generally tougher, no matter what kind. Look at Fallkniven blades, for instance, with 420J2 on the outside and VG-10 on the inside.

Solid VG-10 at 59 HRC is very brittle. The lamination allows the tougher steel to absorb shock and prevent any kind of chipping that would occur from the edge flexing during strenuous activity.

If I was cheating the system I could do alot better job then that. I'd have other people roll first so when they roll a two or one i would roll a three and four and make it look close, not roll the same semi-high number 3 times, and risk losing to a higher number. People occasionally roll trips and i just did it in three rolls.
