What I heard was that Jesus's birthday was in April sometime close to Easter. The reasoning for it being on the 25th was to coincide with the winter solstice. However that holiday belonged to the pagans. I think a priest or something of the like wen't around trying to convert people to Christianity. Some of the pagans were up for this idea, but did not want to abandon this holiday. So the christian church recognized this holiday as Christmas, and celebrated it as the birth of jesus.

The whole shepards watching over their flocks at night only occurs during the spring. Shepards don't normally watch over their sheep at night during summer/spring/winter, however, during the spring it happens every night. (wolves and shit need to feed the kids and attack more during the spring)

I can agree to most of that, but its still only a theory. No one truly knows when the birth of Christ occurred, and while we're on the subject I'd like to go over some other misconceptions as well.
First, strait from the bible, and contrary to almost all movies/books, is that when Jesus was born the local shepards did come to look at him soon after birth, but it took the wise men likely more than at least a year to arrive in Bethlehem. It is stated that the wise men came from the far East, most likely Persia, and the time that would pass between them receiving the news and journeying across the untamed and very desert/mountainous terrain to get to the city would be very long indeed. However, that being said, Joseph and Mary were only in Bethlehem for the census that Herod tried to use to find Jesus, because at the time he thought Jesus would be a man. This brings up the question of how long would the new family be staying in Judaea after the birth of Jesus, because after all there was no purpose in going there for them except for the census. So really they would most likely only remain long enough to resupply and then journey home. But they never went back to their home town, because they ran off to Egypt to avoid the slaying of Jesus with all the other 1 and 2 year olds, more evidence that Jesus was not a newborn when Herod got such news of his age from the wise men, who went by his palace looking for directions. Perplexing.
Another smaller thing would be the fact that no one knows how many wise men there were. The gifts given were gold, frankincense, and mere, suggesting three people, however it would not be hard at all to have six men, with two bringing gold, two bringing mere, etc. There could have technically been one bringing three gifts, but that is unlikely due to the wording, 'wise men' and not 'wise man'. If there was only one, there would probably be a name to go with it, showing his importance. This also can be said to the effect that there were so.....

many wise men that it would take to much time and effort to get all of their names. But in reality, Joseph probably just didn't give two flying fucks, as he just got a bunch of fuckin gold and fancy perfume. Hooray.
