Knives are not only messier, but it's a lot of work stabbing anything.

First imagine stabbing meat.
Now imagine that meat still being alive, like a deer you are hunting.
Now imagine that it is not in fact meat, but a person fighting back, and that they might also be armed.

Tl;Dr: guns are more efficient (allowing high-velocity metal to do the killing for you), and they keep you safely away from whatever you're trying to stop/kill/wound.
