You have plenty of choices, all of which impact what you can and can't do and how the world changes and who your friends and enemies are. Sure it's alot more linear than most other WRPGs but it's full of different quests and character development so i let it pass. Combat in the second one is great. Not every game needs to be vast world of exploration full of nothing but fetch quests and loot.
I don't know how much choice affects things in the second game, but in the first game my choices heavily affected what become of the characters and what they thought of me, but from where i am in the second one now, it seems to do the same. Each choice has a consequence. An example would be at the beginning of the second one, if you didn't talk that new recruit into wearing armor into battle, he would have died and thus you would have had to fight alot more people.

I'd also like to add that the first game starts extremely slow, and assuming you were talking about the second game (since you mentioned stealth, which isn't really in the first game) it might have done the same and doesn't open up for a while either.
Also, be aware the the combat in the first one is really weird and takes a while to get used to. It's basically timed clicking to follow with combos and you need to utilize 3 different attack styles for different enemies, and the more you level up that style for that weapon type, you do more attacks with each clicks, which changes the timing to click to chain together your attacks.
In other words, don't click like a madman, it'll get you killed faster than shit.

Another example would be in the first game, choosing whether to side with either the Order or the Scoia'Tael or going neutral near the end/through out the game. Choosing the Order gives you an armor that vastly improves combat, the Scoia'Tael vastly improves your magic signs, and going neutral gives one that's fitted well for both. The negative side is that if you join the order, some characters will hate you and you will lose quests from them, joining the Scoia'Tael does the same and gets you bad rep from alot of the humans, and neutral makes both sides your enemy and you'll have a harder time in battle.
I've yet to see what all this does when carried over into the second game, but i'm sure it'll go even further (i chose neutral, because quite frankly, both sides are complete assholes)
I also like the game for it's style and gameplay. To each his own, i understand some people prefer alot of exploration in RPGs, but i think it found a nice balance between the two. It's linear to a degree, but offers alot to do in that linear design.
