There have been a number of famous books finished by other authors or family members. Most people can't even tell, especially when the authors create a complex parallel world. Authors tend to leave notes, have rough drafts, edits, and outlines. Look at JRR Tolkien (Silmarillion was compiled and published by his son, along with children of Hurin, Unfinished Tales, all 12 histories of middle earth. He hired a sci fi writer to help reconstruct parts.) Frank Herbert (Dune, post series and pre series written after he died.) The Mysterious Stranger (Mark Twain) was written in part, compiled, and published six years after Twian's death by his biographer, from 3 rough drafts over 20 years apart.
I would argue that not only would it be quite good, but highly likely that the series would be finished barring a court injunction .

im on towers of midnight and i think i like sanderson more than Jordan. I found jordan to be too discriptive about the surroundings of the characters i.e. going on for 3 pages about the way a fucking room is decorated. Sanderson seems to get to the point faster. I realize he doesnt deserve half the credit jordan does but meh.

Jordan had his own style. I mean, I've heard that exact same complaint about Stephen King, and he's probably tied with Jordan as my favorite author. To me, descriptiveness pulls me into the story, making it come alive around me. I'd rather read
"The Three Fold land is a hell of sand and sun, with death lurking behind every dune. A fist of Trollocs would sooner court the creeping death of Mashadar than venture into those dunes, for the ones who don't succumb to the wastes, succumb to the spears of it's ever-vigilant children."
"The Waste is a hot desert."
I mean, personal opinions are fine and all, but it was Jordan's series. I just wish Sanderson could have more closely kept to Jordan's style, but I can imagine that that would be extremely difficult, so I don't blame him.
On a side note-check it out, lanfear! More WoT fans on FJ!
