I work ina retail supermarket where cutting fruit is literally my job. A whole fucking lot more is wasted than you think, this isn't that bad though he really is just cutting the rind off which most people don't eat. But you cut a shit ton of fruit you stop caring about waste and just try to get as much done as you can.
