So it's nothing too major, but all the dozens of small things like this the anime leaves out build up and mess with the lore.

Well in the anime Hestia describes it as "the ability to overcome any difficulty" so yeah the anime definitely fucked it up.

She just describes it like that because it's reference to the original legend of the Argonaut, the skill description itself doesn't say so. Also, that video reminded me of the #1 thing that bothered me about the Danmachi anime.

Then why does it seem to start happening on its own when fighting those minotaurs or that baby dragon? And I wasn't referring to the growth speed thing.

He activated it by accident before the baby dragon appeared, and Velf was asking him what the white flakes around his arm were about. (I didn't watch the anime, so the anime may have fucked it up). Against the minotaurs he activated it consciously.

That's not a slippery slope at all. That's more like a staircase. A slope will have gravity drag your ass downwards to the bottom. It's pretty easy to consciously not take another step down the stairs.
