As far as I can tell the external appearance of the ship was not seriously altered in any way (which would make sense, as it is used as a smuggler ship and therefore should be able to travel incognito). However, the internal systems - hyperdrive, engines, weapons, etc. were all extensively modified to better suit the various owners' purposes; the ship has been around since the Clone Wars and passed through the hands of six owners in that time, being modified and / or rebuilt by a dozen people.

The YT-1300 was one of Corellian Engineering Corporation's most successful freighter models, so it's reasonable that somebody would have a few YT-1300s, and technically there could even be a few that were modified to the extent that the Millenium Falcon was. Initially was most popular in two configurations; the YT-1300p, and the YT-1300f. By the time the Empire had risen to power, a blended configuration known as the YT-1300fp was considered the stock version, and the separate variants had fallen out of common usage. The Millenium Falcon's floor plan was that of the YT-1300fp by the time it was in Han Solo's hands, though it may have started its life as a different configuration and simply had been rebuilt. The modifications made to the Millenium Falcon were quite illegal, but it was still possible to produce another ship like it, if one were to know exactly what modifications had been made to the Falcon.

The Firespray-31-Class patrol / attack craft was produced by Kuat Systems Engineering as a prisoner transport for the Republic Correctional Authority. Considering it was only in prototype stage at the time Jango Fett became involved, there was a rather limited number available, and all were stationed on Oovo IV.

Multiple Firespray-31s would not be possible at all, however; just as Shmooglavoue said, Jango Fett destroyed all but one when he staged a prison break on Oovo IV. He then took the remaining ship as the Slave I, of course.

Jango's destruction of the Firespray-31-class prototypes put Kuat Systems Engineering into a spot of financial trouble, and production of the Firespray-31-class halted at that point. Therefore, the Slave I was the only remaining unit of the Firespray-31-class, and only Kuat Systems Engineering was capable of producing more. This would effectively make it impossible for more than Jango's particular Firespray-31-class to appear on any given battlefield.

tl;dr, there could totally be more ships like the Millennium Falcon but there's absolutely no way there's another like the Slave I - it's one of a kind.
