Two hobbits who needed multiple armies worth of men/dwarfs/elfs to even get close enough to sneak into Mt. Doom.
And those armies had no chance of winning on their own.

They had exactly the opposite of multiple armies.
The Nine were deliberately chosen as a small group to avoid detection, and they're only the Nine so far as the falls, which is basically the easy part of the journey.
The closest thing the hobbits get to any sort of military help is Faramir, who conveniently nearly tries to drag them the wrong way when he finds out they're going to Mordor.

Said armies marched to the black gate where Sauron redirected all of his forces thus opening the path to the mountain.

Which nearly got the hobbits captured when they were going through Minas Morgul because it meant the Nazgul were riding to war with their armies.
Frodo DID end up getting captured because of an Orc patrol going down the mountain.

Since they were taking Gollum's path through the caves anyways - admittedly, going to Shelob, but still - they would have bypassed any major armies. The path didn't rely on defenses moving to the Black Gate, because the hobbits couldn't communicate with Aragorn anyways.

Sauron thought Aragorn had the ring. When they attacked the Black Gate, he sent all he could against him, including anything protecting Mount Doom. The attack cleared the way for Frodo and Sam. Otherwise, they would have never made it. It's the one place the ring could be destroyed, he's not going to leave it unguarded unless there is a reason. If there were guards there, Frodo and Sam would be fucked.

The books don't describe any kind of presence around Mt Doom, it's just a mountain.
If he thought Aragorn had the ring in the first place, he wouldn't have guarded the mountain.
If there were going to be guards there without the march on the Black Gate, why would he have moved them? He would clearly have been suspicious of Aragorn not having the ring.

The books DO however state that there were orcs loitering about all over the plains between Minas Morgul and Mount Doom until they all started moving towards the Black Gate.

Sauron didn't think of Aragorn not having the ring. He thought he was trying to grab Sauron's power, and he would never give the ring up if he was trying to do so.
There weren't guards exactly at Mount Doom, but it was extremely close to Barad Dur, which was heavily guarded and housed Sauron's eye. To get close to Mount Doom, you have to get close to the tower. And Frodo and Sam had a very slim chance of sneaky through that mess.
But with Aragorn distracting them, they just walked through.

But with the Nazgul riding to war there would be none to patrol Mordor, other than samll orc patrols and Saurons own attention, again redirected with the assault on the black gate, albeit temporarily.
Frodo got captured because of Shelob got to him first, if she werent there they should easily be able to hide from the patrol.
