X99 and Z170 are chipsets, they determine which CPU generation you're gonna use, and basically which technology your motherboard/PC will have (USB 2.0/3.0/3.1, RAM type etc.)

x99 is a chipset for Intel Haswell-E CPUs (super performant, super expensive, super overkill), z170 is a chipset for Skylake CPUs (brand new intel generation, more user-friendly, it has all the latest technologies and the support for the ones to come).
You have to choose the z170 if you want the config I posted earlier.

Origin PCs all have watercooling apparently, but they're closed loops so you shouldn't have to worry about leaks and maintenance.

Also yeah the case is small, I went for a small form factor cause it's generally a bit cheaper by focusing on the stuff you really need. Really the biggest con of this solution here is that if you go for SLI or Crossfire (google it if you want) you won't have a full bandwidth for your graphics card, but believe me you don't need it right now and won't for a long time with a 980Ti.
The other things a mid-tower case would bring are more bays for HDDs and optical drives, and more space for airflow, watercooling systems, and cable management.
