Where are you from? because I have to say that when I was on vacation in America for a few weeks I noticed that I only ever saw people with the -core look. The most non-core metalhead I saw was some mature guy with a Lamb of God shirt...the rest was plastered with tattoos, stretchers and tanktops with dumb quotes.
Here in Europe that's much less the case. There's more core-people, but other metal-fans can definitely be found as well

You're gonna be searching for a long time for such a niche cover band, judging from my attempts to join a black or death metal band while I live within 10 miles of at least several million people. Most people nowdays want to play some kind of core BS and old thrash metal cover stuff. GL tho.

Yep, I am aware of that.
I was in a blackened death metal band for 2,5 years, but after a lot of arguing and discussing decided to step out of it a few days ago because of disagreements in the band (and the fact that the vocalist was dumb as shit and being a gigantic fucking asshole and I could not tolerate working with him any longer, whilst the rest of the band, even though they were really nice guys, completely chose his side)

And yeah, I'm aware that nowadays core stuff is what attracts most people. I've been really into it for a while and still enjoy quite some -core bands, but with some exceptions, every time I talk with those people they seem so fucking shallow and boring. There's no way I could work in a band with unserious (is that a word?) people like that

Also, we'll probably be okay with playing a cover from other post-ish bands (Amenra, The Ocean for example) but the main focus will definitely be going towards Cult of Luna.

Right now I don't know if we'll be writing songs ourselves. I think that if everything works out we eventually will. But the cover-aspect has priority right now.

Also, we realise that this is very specific and will never bring us something in terms of fame or money or anyhting of the likes. We purely do this out of love for Cult of Luna's music and just playing music in general. It's a hobby in which we hope to be able to put our heart and soul.
