Ozai was more powerful, and should've had blue fire with that idea.
But just because you're in control of your emotions doesn't mean you don't feel hate and anger, it just means you can direct it easier. Azula was obviously pretty good at controlling her emotions, since she was cool as a cucumber on the surface and only showed her anger under certain, specific situations.
Maybe it was blue because the creators of the show wanted to create a unique antagonist with a calling card memorable enough to not just be "Zuko's sister."
Instead she was "That crazy bitch with the blue fire."
(it was also easier to keep track of whose fire was whose in the final battle.)

There were many theories thrown around but the one I like best is that her mastery of lightning was at its peek, I could see her lightning being more powerful than Ozai's. It was because of this she channelled some of that energy into her fire but that's obviously where things start to become a bit messy as in how is that possible and such.
It is worth noting that when her flame is dissipating it turns orange like any one else's fire, it may simply be that her fire is hotter than everyone else's in the same quantity but Ozai could produce far more which could overpower her.

I'm not entirely sure how true this is, but I heard that Azula's fire is blue because of her technique. Her flames are stronger than the normal flames but she sacrifices distance for that power. It was also probably to show that she was more skilled than the other firebenders.

Watch her during most of season one.
She shows sighs of an obvious amateur: Direct strikes, standing very straight and stiff.
After learning at the North Pole: Holds herself low to the ground, focuses on redirecting their opponent's attack, very flexible and a lot more confident in her attack and defense.
She changed. Oh god she changed.
Zuko became a lot more controlled and balanced; he starts only every attacking, and his defense sucks (see fight with Zhao in episode 2(? 3?); Zhao has a solid defense and shrugs of Zuko's attacks, Zuko can't handle simple blasts from Zhao.
Later in the series, he was a skilled defender, and knew when to attack, when to move, and when to parry.
All of them progressed, a lot.

If we have to pick one person who grew the most it's toph. she moved a rock, then a melon army that was also on fire, then metal! if we don't count the obvious aang who surrounded himself in all elements and slapped a grown man in the chest.

Actually, she's incrediably self-righteous, spends a lot of time shouldering the burdens and doesn't let anyone help her, but when she collapses she blames everyone else.
The characters in TLA were all rather deep and interesting. Sure, not time-honored-saga worthy, but for a cartoon they sure were.

Katara could bloodbend without the full moon, she usually just opted not to .

She bloodbended the first guy she thought was her mother's killer on the boat, and that was under full moon. The guy who actually killed her mother tripped on a wire they set up, then stayed on the ground throughout the scene, no bloodbending occurred.

Ozai went crazy genocidal and started a whole new campaign that we hadn't invested in emotionally just yet. It was classic bad-guy stuff that we didn't care about as much as the people of the world being imprisoned and killed just because they bend different elements.
Aang Vs. Ozai was supposed to be the biggest part of the show, but it was only really his personal struggle. -- On the other had, the fire nation as a whole was the big issue with the world, and the leader of it would lead the world into either peace and industry, or war and destruction.
TL;DR Avatar the Last Airbender was supposed to be about a Mary Sue that corrected the balance of life, but ended up the story of a prince finding himself and ending a 100 year war by choosing love over hate.
10/10 would watch again.

He can use all four elements, everyone loves him, he has a super mode he can access to completely destroy any opposition, and he can take away the bending of people he deems unworthy or hazardous. -- He also quickly and efficiently learned the seismic sense that made Toph unique.
I dunno, dude. He seems pretty Mary Sue-ish.
I mean, he's even called "The Avatar."
I'll give it to you that he had to earn a couple of those things, but it still makes him a bit of an overpowered character, and kind of a vessel to relate the message "bad things are bad! -- good people like me will beat them with hope and mercy!"
Aang felt like the walking aesop character; whereas other characters like Katara, Zuko, Iroh, Toph, and even Sokka had much more earthly and realistic abilities and personalities. (realistic as in they earned them from their trails in their world as opposed to just being "gifted" as the story requires.)
It was like Aang was played by a bright-eyed newbie while every other character in the story was a seasoned DM or group that let him do whatever he wanted to the story.

Aang had to travel across the world and beg masters to teach him the other elements, he had a hard time learning several of them, accidentally burned his love interest, was too distraught to learn from Toph, was too scared to fight the fire lord (actually considering giving up until people like Zuko forced him into continuing), was defeated multiple times and one of those times resulted in serious mental distress including losing access to his avatar state and has a devotion to his friends that often forces him to give up objectives he needs to accomplish in order to protect them.
The only mary sue situation he has in the series is that he refuses to kill and manages to find a way not to kill. That is softened by the next series where the method he employs becomes a pivotal story point.
