You can do either or. Getting max beauty is significantly easier now though. I used a milotic on my play of OR that I just beat, didn't figure out how to make pokeblock until like the 5th gym though, it's just the key item that is the pokeblock case and apparently the maker for them. Now you just choose 2-4 berries, and it makes pokeblock instantly. As well as that, there's no limit to how many pokeblock you can feed your pokemon now, so you could max each contest stat if you wanted. If you're going for beauty, make blue pokeblock with blue colored berries.
