I know sodium in salt can activate the nerves (and muscles) and I've even personally seen it in fresh fish fillets, but the details are beyond my understanding of biology. I don't see salt there because she seemed to be still in process of cleaning the fish so I'd have to guess that when she crabbed the fish she applied pressure on some nerves that send the signal to the muscles to activate.
