The Scrooge McDuck canon depends on which artist you want to follow. According to the Don Rosa canon (which also is the Barks canon) Scrooge was born on the date the tombstone states. The reason why he might have lived that long is because of another story (which i wonder is canon) he drank from the fountain of youth which cured all of his diseases, which might explain his longevity.
