Because the gameplay is quite terrible/unresponsive/clunky by today's standards. They didn't update it for the remaster.
Back when every game played like that, it wasn't a big deal as people had the rhythm of how to play them. Now that everything is more precise and accurate, people have gotten spoiled and find it hard to play the older platformers (I'm guessing especially the driving is causing people problems and of course if they didn't play the games before, running towards the camera must be weird)

we are a few console generations from that being able to happen, just a few years ago there were limits on how many npcs can be on screen at one time without the game lagging up a storm.
Technically we can do it now. I can't remember for the life of me, but I know I've played a game where the debris stayed around for the entire game. After the rubble settled, the larger chunks would shift to a lower resolution texture and in essence "become" part of the environment, so you couldn't move them around anymore and explosives had no effect on them.
Killing floor 2 actually does something very similar to this. Whenever you kill a zed they leave a blood splatter on the floor, dismembering them also causes a splatter. By the end of a long game you could easily have 90% of the map covered in blood. In order to not make your game lag to hell by rendering every pool of blood the game treats them as part of the floor texture, so as long as you can render the floor then you won't suffer a performance drop at all.
