"Pure" water readily absorbs carbon dioxide from the atmosphere which then gets converted to carbonic acid. Thats why the bottled water and tap water were acidic with a pH of around 5. If the water has a stable pH above 7, it's not pure. It's got something in it that's buffering the carbon dioxide.
