I'm going to counter sniffythebird's point about the cooler; if the appearance of the cooler is worth what it costs to you (and it does look pretty sick), then I say feel free, as you're not going to be overclocking anyway.
Since you're not interested in overclocking, you can save even more money by going with a Intel Xeon E3-1230 V5. It is effectively the same CPU as the i7-6700 without integrated graphics and a marginally lower turbo core of 100MHz and will save you $50.

The RM-series are low end power supplies. If you're intent on going with Corsair, look for an RMi power supply, though I'd suggest going with EVGA's Supernova G2 or GS power supplies instead. Although the RM line from Corsair is decent (have an RM1000 myself, but only cause it was piss cheap at the time I bought it), you're better off getting an EVGA Supernova PSU, which are cheaper and higher quality than a Corsair RM / RMx.
Another word on liquid cooling: I can understand the aesthetic of it is very appealing, but those closed loop coolers are in most cases just a waste of money. For about 60-80 bucks you can get a BIG air cooler which will be better than EVERY liquid cooling solution in the same price range. Couple of things to consider:
You can save quite a bit of money here and there by cutting down on things you don't necessarily need. All in one liquid coolers are much more expensive than air coolers for the "amount" of cooling they provide, and I don't recommend them unless you're building in a very small and cramped case with poor airflow. Personally I'd either just spend the same amount of money on a big air cooler (which is better than those little 120mm liquid coolers), or go for a cheap air cooler like the 212 EVO, which is still a very solid cooler. To give you an idea, I have one sitting on my i7-5820K which is a 6-core and overclocked to 4.2Ghz. It stays at 40-60C while gaming and 65-75C while under full load rendering videos. The money you save here could just aswell be put towards a higher end CPU like the 6700K instead of the 6600K.
The same thing goes for the case fans. Almost every case has at least a few fans included, and paying extra for more fans really isn't going to make much of a difference, if anything. I'd recommend at least holding off on buying extra fans until you've built the PC and used it for a while. If your temperatures and noise levels are good, then yeah... you won't need to spend any more.
As for the monitors, it's just gonna come down to preference and all. But with either a 1070 or 1060, I would personally want a 144hz monitor. At 1920x1080 those cards are easily gonna run any game, and 60hz just doesn't do them justice. This is also where the higher end CPU comes in. Some of the very CPU intensive games will usually max out (or close to max out) an i5 once you start going just above 60 FPS, but an i7 will usually pull ahead somewhat further. Having over 600 hours of playtime in GTA 5 (which is one of the most CPU intensive games out there today), I can safely stand by this statement.
Other than that, good call on the power supply. There's still way too many people who think anything but having just enough watts for the components doesn't matter and is "overkill", and they cheap out on the most low end trash shady brand there is.... or a Corsair CX.

What the guy below me said, but also, you don't need a power supply that big, with that config, anything over 500w should be plenty. And, you could put some of that money saved into a case. The S340 is nice, but I'd recommend a Phanteks Eclipse P400s. If you're going with a 1070, wait a while, because prices are pretty fucked right now.
