It is very common to think this but it is very untrue. yes the salt will pull water, and proteins out of the steak among other things but not only is it not allot of water most of the water, and salt will be re-absorbed into the steak. the reason you salt the steak is 1 for seasoning and 2 those proteins i mentioned brown very nicely while cooking.

Jerky being dry and tough has more to do with being put onto a drying rack for 12+ hours. also think about it bacon and many other cured meats are packed in salt for extended periods of time and they by nature are not dry and/or tough. you would have to take a small piece of meat and leave it in an access of salt for a while for it to become to toughen it up like your saying.

I heard the same. Salt draws the moisture out of the steak especially when it's not cooking and will result in a dryer steak. Salt your steak right before it hits the hot surface so it caramelizes the flavor while not drying out the meat.

no you want the steak to sit so that it will absorb the water and salt while leaving the outside dry again and now covered with proteins ready for browning.
