im pretty sure it means you have to be behind the ball (assuming you're facing the goal) to touch it. In other words, people cant pass you the ball if you're between them and the goal. They have to pass sideways. right?

Offside (sometimes known as offsides) is Law 11 in association football which states that if a player is in an offside position (as defined below) when the ball is touched or played by a team-mate, the player may not become actively involved in the play. A player is in an offside position when closer to the opponent's goal line than both the ball and the second-to-last defender (usually the last outfield player, the goalkeeper counting as last defender), and also in the opponent's half of the pitch.

I agree that words change meaning, but only by majority. Not everyone calls a picture on the internet a "meme" because it's totally unnecessary and it's definitely not "the current meaning of the word" for most people.

If we go to the original meaning of the word, which basically is "ideas that spread among people" a meme in the internet sense is like trollface a thing that has been spread and mean something to many people. Just because a picture is spread on the internet it does not become a meme.
