Cockroches wont survive extreme ammounts. But they will survive it longer more than any other animal.
It wouldnt be the nuclear blasts that would kill you, it would be fallout and nuclear winter.

Also, to end all life on Earth you would have to kill everything in the ocean. Although I don't know for sure, I doubt even a nuclear winter would kill everything. Plus tardigrades, as previously mentioned, can survive ridiculous amounts of radiation.
Encyclopedia Britannica lists vinegar as a food so I'm going to count it as a food.
