hah, sadly though, the yeasts aren't of the right variety to ferment the honey into mead.

because then we might uncover some awesome, accidental Egyptian mead burials.
that'd probably sell for quite a lot, once they verified it was safe.

I've actually never had mead. But ancient anything sells for a lot most of the time.

yes, actually, you are right. because it contains substrates which are enzymatically broken down into peroxides.
and maple syrup doesn't have this, also true.

but even if honey didn't have this, it's conditions would be totally inhospitable, for the same reason as maple syrup.
it's acidic, has no usable water, but mostly because of the osmotic pressure caused by the sugar.

points being.
honey still does spoil, only slowly (as water is absorbed from the atmosphere over many years, it becomes a mildly hospitable environment to naturally occurring yeasts).
and maple syrup also spoils at a comparably slow rate, when compared to things like bread or whatever.

the fungus entered the jar once it was opened, evidently due to the poor hygiene of the idiot who stored it.
the syrup didn't go off on its own, it had help.

if you store it properly, it won't happen.
the substance itself theoretically has a shelf life of many hundreds of years, and the exact same goes for honey.
but if you purposefully or accidentally introduce excess life into it, of course it will spoil.

besides, if this is the case for maple syrup, don't you think the same logic will be applicable to honey? which makes the post still wrong.
it doesn't have a magical barrier which stops organisms from reproducing within it, it just happens to have far too high a concentration of sugar, which is exactly the same reason for the syrup's shelf life.
