Everything would just be like a blind person who doesn't see but can comprehend everything in sight in it's physical form. Like close your eyes and walk around your room, and when you know it well, just pretend that you could immediately comprehend everything in your field of view as well as you could imagine the physical concept of your room.
Considering that color is just a perception of wavelength through vision, it's sort of dependent on what's looking at it. Some animals like cats see things in a greenish tint, while dogs see black and white. Humans can see a massive variety of colors and combinations, but we're still limited compared with the mantis shrimp that can perceive much more wavelengths than we can.
The way we perceive color using our eyes is through cones and rods located in the retina, so depending on what kind of cones and rods you have (color, color blindness, black/white vision etc.) things will simply be perceived differently.
If we couldn't see any color whatsoever I'm pretty sure we'd be blind or we'd develop a new way to 'see', be it heat sensing, sound and whatnot.
