Why do Social Democrats consider themselves socialists when they're clearly not?

Very good question. Probably because its either easier to say socialist than social democratist or something like that or because they want to sound like a opposition to the capitalist.

But that's the fallacy. Social democrats support capitalism, but want to improve the lives of people living under capitalism.

Njaaa... You see, I live in Norway, a very social democratic society and here, the social democrats, often criticises Capitalism for "not working" and things like that.

Most or many social democrats simply are oblivious to the fact that they support Capitalism, but as you say, want to improve the lives of people living under capitalism.

Because historically speaking Social Democracy was the idea that a revolution was not necessary and to establish socialism you would just keep issuing reform after reform after reform. Bernstein, the guy who came up with this 'theory', thought the credit system had made capitalism invincible and impervious to any revolutionary insurrection. To paraphrase Rosa Luxembourg, in her marvellous pamphlet called "Reform or Revolution?": Dis nigga wants to make social reform it's (pre-bersteinian social democracy and socialism in general) end."

Social Democrats today have ditched Bernstein's ideas, which laid down the framework for modern (and moderate) social democracy and probably couldn't tell you who he was and have re-radicalized themselves to the point where they are little but simple soft-capitalists. They go under the guise of Socialism to appeal to the working class. Modern day social-democrats are everything that is wrong with social democracy, but me saying this implies it was a great thing to begin with.
