Being Egypt is great. First you get to fight the Turks, then the Crusaders, then the Mongols, and finally the Timurids. If you're really lucky, all at the same time. It is seriously the most challenging faction to play as. I eventually tried a playthrough with them after noticing that in each one of my other games, I ended up destroying Egypt no matter who I played, since I ended up fighting my way down to Jerusalem. The only time you get to through all those broken diplomacy mechanics out the window and just kill everybody!

whats the best way to deal with the mongols and the timurids?

I remember in my Byzantine playthrough I wittled down their forces by drawing out an army at a time and quickly ambushing it with at least three other armies, then replacing my losses from nearby fortresses that were never more than a turn or two away(around Pena and Sofia). However, if you're really lazy and patient, just use assassins to kill off their royal family. This is difficult because even if you cheat, your assassins rarely get above a 15% chance of success. And by patient I mean use RNG exploit.

However, as Egypt, Antioch will be lost since they will only disperse sufficiently once they capture that first city. The trick is also getting them to go after a neighbor. I didn't destroy the Turks so eventually the Mongols got distracted with them, which gave me some breathing space. Also, the assassin thing is bit harder than it sounds since it will require around 10 tries per member of the royal family, the last three you will need to wipe out in the same turn or else they will get new members.

Also, I've heard of a strategy where you get the Mongols and Timurids to destroy each other until you can sweep in and take out the remnants. However, this can easily backfire if one drastically gains the upper hand and is able to replenish forces.
