Putting them in the fridge is actually more humane. If they're in there for a little while, they go into a sort of stasis, so they can't feel anything when you drop them in the pot.

If you kill them and then wait to cook them they taste bad and don't come out very good, shell fish you have to cook alive, so when you buy like crab legs from the store in packages those were already precooked. But yes you can knock them unconscious
