It's because in the Grimm version back in 1812, the Prince in order to keep Cinderella from leaving had the stairs covered in tar(or pitch). Her shoe was stuck in the tar, it didn't really fall off on its own

Stress and warmth usually make you sweat, you're hands, feet and face sweat the easiest, considering she was running out of a castle that most likely wasn't a cold place, I'd say sweat as well as the fact you're a faggot for trying to find a plot-hole in this kind of story, are most likely the reason it fell off.
