Why is it that in every lore of anything the Elves get to be immortal? Why not a race of Immortal Gnomes that control the world's power supply?

Because Elves are often predicted as the closest things to creators/gods (or whatever they are called in that specific world/universe). They are often the ancestors to the gods whilst human, dwarfs, gnomes, you name it, are only sub-races.

Because the "standard" fantasy setting is to steal a few acres out of Tolkein's back yard. The fact that standard and fantasy can be used in the same sentence like that goes against the very idea of what fantasy should be.

Problem is if you try to make another long lived humanoid race, people associate them with elves no matter what you call them.
