Did you know she is like 6'3 and 200 freaking pounds (Read it in the Players Guide to Super Metroid)? Dem legs.

Zelda is an amazonian 6'5. Nintendo likes their ladies lengthy.

So Link is like 6'6-6'7?

I don't think so, if you're using smash bros to measure height then the characters would be wrong heights. Otherwise olimar would be like 10 inches or something.

But I still don't understand what those big shoulder things are for?

The larger shoulders were a design choice from Metroid II.
Since the game was on the Gameboy and in all grey, you chouldn't tell the difference when you got a new suit, so rather than a colour change, the designers made a physical change to her suit instead. The slightly bulkier Varia suit design stuck and that's what we have now.

for when she rolls up in a ball

You get them when you get the Varia suit, not when you get the ball. So it's probably some tempature thingy
