In my experience, adding salt to meat meat before you cook it will absolutely **** it up. The salt sucks out the moisture. Thoughts?

Adding too much salt maybe, but adding kosher salt to the outside of meat will only do one thing. Dry out the outside "skin". Now you may be thinking that drying out that portion is still "Drying out the steak"

Sure but have you ever thought about getting a good sear on your steak?

If you don't dry the outside of your meat just a bit (by salting it before grilling.) then it will take much longer and require much higher heats to sear the outside of your steak. What will this do to your steak? Look at the picture.

Searing the outside of a steak is so important because if you don't then the juices(blood&such) just leak out and the steak will dry up. So salt it, and if you're worried about "drying it out" then let it rest for that 40 minutes, and salt/season it only 10 minutes before you cook it. I personally prefer to salt/season it immediately but that's just me.
