Mostly because we are a social animal.
Mantids are solitary animals that only meet to breed, humans have worked together and shared responsibilities.
Mantids don't raise their young, they make an egg sac and guard it for a period but the parent leaves before the hatching of their young as they would be likely to eat their own young.

but if humans did it it would cut down on starvation, overpopulation, and the tender flesh of human body would become a dietary staple! every one wins

Another problem with that is disease.

Humans have a lot of disease that is easily transferable by ingestion.
I would assume that insects don't have that issue as much, most of the pathogens that I hear they get are from a lot of bird poop and fungal infections.

Overpopulation and starvation are more of a political/social issue than a resources issue. We have the ability to live pretty much anywhere and we produce as much or more food to be able to sustain everybody on the planet, however that doesn't mean that everybody has access to all of that.

If you enjoy pork, chances are you'll enjoy human.
Just make sure you know where the person has been or else you'll likely end up with some nasty neuro-pathogen(if you eat the brain that is).
