There is no such thing as "perfect casting" because everyone's vision of a character is different than another person's. But, when a book doesn't describe a character's race. People usually automatically assume that he or she is white. So most if not all characters end up being white in the movie adaptation.

What about the Percy Jackson books? In Lightning thief he's 12 but the actor is 21. I mean, the entire series is about a prophecy on Percy turning 16! Why age him up!?

I think what you mean is that while there is such a thing as perfect casting in a movie which is made first and foremost as a movie, there is no such thing as perfect casting if you're making a movie from a book.
