The problem is stopping the beam, it's nearly impossible to stop it at an arbitrary point without something impeding it.

You can actually contain ionized plasma with a magnetic field, the only problem is the size and strength of the field and field generator. Maybe it isn't possible to contain such a system in a hand held saber with today's technology, but a few hundred years ago it wasn't possible to land on the moon with the technology of the day.
