It's true that most teachers have several classes to grade. However, it takes longer to do the work than to grade it - my English teacher grades other classes' work during our class (when we're working), and often finishes an entire class's worth of grading in one period. Still a lot of work, but it's not like they're spending the same amount of time per assignment.

Conversely, many students take several classes - I've had days where I get multiple essays/projects on one day, and have to finished them all in one or two days. We don't get to hand stuff in late, it's on a rather strict deadline and thus we can't take our time.

Finally, there's no reason that teachers should have to hold back work for so long. After a month, we're on a new unit, and whatever corrections were made are irrelevant.

tl;dr Everyone has lots of work in school and it takes a long time.
